Orange Cake
Cake Part
2 cups of fine white granulated sugar
2 cups of all purpose flour
1/2 cup of cold water
2 teaspoons of baking powder(level)-Calumet or Glabber Girl will do fine
5 eggs
1 pinch of kosher soda or to taste
Makes 3 layers
Sift the flour with baking powder. Beat the chilled egg whites with the salt and beat egg yolks with sugar. Mix the flour with the beaten egg yolks, add the water slowly and gradually and fold inn the beaten egg whites. Bake in a moderately hot owen - 20-35 minutes- depends on your stove. Will make three tiers cake.
Filling
1 cup of sugar
1 orange
1 egg
Grate the yellow rind of one orange none of the white of orange and also the juice this orange into a cup of sugar mixed with the orange pulp- blended in blender with sugar. then mix this pulp with the beaten white of one egg. This is spread between the layers of a cake while a little warm then frost with orange sections laid all around the top of the cake and heat in the owen to have a nice crust.
