Bran Bread
2 cups of bran
1 pint of warm water
1 teaspoon of white granulated sugar
1 cup of warm water
2 Tablespoons of lard
11/2 cup of brown sugar
4 Tablespoons of molasses
1 Tablespoon of kosher salt
1 yeast cake
Cover two cups of bran with with cold water and let the bran boil for 20 minutes covered with the lid. When the bran cools down add to this bran the sponge made of 1 pint warm water. with 1 teaspoon sugar mixed with 1 yeast cake which has been dissolved in 1 cup warm water with flour, to make a stiff batter let raise. When sponge has risen - after 4-6 hours, you add to the sponge 2 tablespoons of lard, then add 11/2 cup of brown sugar and 4 tablespoons molasses and 1 tablespoon of kosher salt. Mix the dough as you mix it exactly for white bread with all purpose flour, then let your dough rise. Knead the dough and put it into three loaves, then let this dough rise again then bake in moderately hot oven for one hour.
