Snow Cake
1/2 cup of unsalted fresh butter
11/2 cups of white granulated sugar
3 level teaspoons of baking powder- Calumet works the best, Glabber Girl works fine as well
1 cup of fresh sweet milk
2 1/2 cups of flour
1 teaspoon of vanilla extract
5 eggs
Take one half of a cup of fresh unsalted butter and beat it into a cream in a blender, adding gradually 11 / cups of sugar to this cream.
Sift 211/2 cups of white all purpors flour with 3 level teaspoons of baking powder(Calumet or Glabber Girl), slowly add 1 cup of fresh sweet milk which add the cream into the dough, al ternately with the flour . Add one teaspoon of vanilla extract into the dough and fold in carefully the well beaten whites of five eggs. The eggs should be cold and add a pinch of salt ino the egg whites- to have them nicely stiff. Bake in a loaf cake pan three quarters of an hour.
