Stuffing for Fish
1 cup of cracker crumbs or dried bread crumbs- the Graham Crackers will do fine
1 cup of gritts- if there is no cracker crumbs as substitute
2 tablespoons of fresh unsalted butter
1 tablespoon of finely chopped pickle cucumber
1 teaspoon of finely chopped fresh parsley
1 teaspoon of finely chopped onion
1/2 teaspoon of kosher salt
1 teaspoon of black ground pepper
1/2 cup of hot milk or water or enough to moisten the crackers or gritts
Melt the butter, heat the milk and pour onto the gritts or your Graham crackers. Mix well and stuff your fish. This is the family recipe- filling for the river fish- especially carp or pike.
