Suet Pudding
Traditional New Englad Christmas pudding, called Suet pudding, the recipe circa 1900ds.
for this pudding you will need:
2 eggs
1 cup of beef suet chopped very fine
1 cup of brown sugar
1/2 cup syrup
1 cup of fresh sweet milk
1 teaspoon of baking soda soda(level)- Calumet or Glabber Girl will do just fine
3 cups of white all purpose flour
1 cup f chopped seedless raisins- we use Sultana
1 cup of black currants
1 Tablespoon of cornstarch
Soak the black currant and the raisins in cold water for a night. Dredge in the morning and cover with one table spoon of cornstarch, Add to the berries your traditional spices- cinnamon and cloves,. Citron may be added as well, if cared. Add the milk, and berries to the flour sifted with baking soda two- three times. Steam your pudding in the water bath for two hours and after that brown the pudding in the medium hot oven. This pudding may be served with creamy sauce or lemon sauce.
