Elderberry Pie
Elderberry Pie- traditionally edelberries are considered good for the cough and the jam of edelberries is quite good. Edelberry juice is mixed with apple juice for the nice color and good taste- if jellies are made. Edelberry jam is not bad at all as well. Traditional American point of view- edelberries are mixed with apples in the cakes, jams or juices.
For this pie you will need
1 pie crust
2 semi sweet apples
1 cup of elderberries
1 Tablespoon of all purpose white flour
1 cup of white granulated sugar
1 Tablespoon of white cider vinegar
1 pinch of salt or to taste
Line the pie tin with pie crust and bake for 10 mins. Peel and core the apples, slice the apples very fine and put in the pie in a nice thin layer. Soak your berries in the sugar for an hour or two. Dredge them with the spoonful of flour or cornstarch. Onto the top of the apples, add lay evenly the layer of elderberries. Sprinkle one tablespoon flour over this then sprinkle with some sugar powder. Put into a cup one tablespoon vinegar one tablespoon spoon of cold water.Sprinkle this water over the layer of the edelberries and then add the top crust onto the pie. Bake this pie in a moderately hot oven for 1 hour 15 mins roughly.
