Tapioca Pudding
4 Tablespoons of tapioca
1 quart of fresh sweet milk
4 eggs
1 cup of white granulated sugar
1 cup of seedles raisins- we use Sultana raisins
Tapioca Pudding- traditional dessert of the children of our family for generations. Especially loved by children of our Canadian side of the family. For this pudding you will need to soak as much as four big tablespoons of tapioca for two or three hours in a cold water. Then you put your tapioca into one quart of warm sweet milk into the water bath on stove, and turn the fire under the double boiler and cook your tapioca pudding till tapioca is transparent.Turn of the fire and beat into this this add yolks of four eggs and one cup sugar, you can fold them in slowly with a beater and fold them already beaten, as well fold in the raisins if desired, just do not forget to to soak them before, Frost with the beaten stiffly egg whites and flavor as desired, Raisins may also be used. Boil in the water bath in the medium hot owen when you put the egg whites on the top. You can do without them finely- put on the top the whipping cream.
