Veal Loaf
Traditional meat loaf of my Presbyterian family of the First day of the New Year. Called Veal loaf, though this is made from the mix of the veal and pork.
11/2 pound of veal
11/ 2 pound of pork chopped fine
2 crackers - best are the Graham Crackers
2 eggs
1 teaspoonful of kosher salt
1/2 cup of fresh unsalted butter- the size of an egg
11/2 cupful of sweet fresh milk
Grind the veal and the pork in the blender with the finest blade. Soak the crackers in the milk, and add the beaten eggs into the milk. Mix all ingredients well in the mixing bowl, put into the well greased loaf pan and bake in a loaf in a medium hot oven for 1 hour and 15 minutes.
