Vegetable Salad
1 lb red semi sweet apples
1 lb carrots
3 stalks celery
2 tablespoons olive oil
1 tablespoon lemon juice or white apple cider vinegar
1 cup grinded nut meats
For this traditional salad of my family all parts of apples carrots and celery should be equal. Proportion of apples, celery and carrots are 1:1:1. if you have fresh carrots use them raw for this salad. But this salad as well is nice if made from the boiled grinded carrots- then you will need some butter or cream for a twist, Grind the carrots, celery, and apples with a food chopper or with a beet grater mandolin. Mix the vegetables and apples thoroughly with the dressing. Do not forget- proportion of the olive oil to vinegar dressing is traditionally olive: vinegar and 2:1. The aunt of my husbad, Mrs FS Betz- we called her aunt Betzy- used to love this salad particularly. She as telling that if a few nuts are added to this salad, it forms a food containing all the ingredients the human system requires and in almost a perfectly balanced food - the carrot salad. She was telling this to each friend in 1917 in Southern California.
