German Puffs
For this German style puffs you will need
1 pint of sweet fresh milk
3 eggs
5-6 tablespoons of all purpose white wheat flour
1/2 cup of white granulated sugar
1 tablespoon of fresh unsalted butter
German Puffs for this recipe of the pastry you need to take one pint of sweet milk and three eggs and the white wheat all purpose flour - just enough to make a thin batter. Your pour this batter into eight well buttered muffin cups. Have your oven hot and don't be discouraged that your muffins don't rise for the first twenty or twenty five minutes. They rise suddenly and they will soon surprise by puffing above the cups and turning very nice golden brown. For the sauce of the muffins- beat sugar and add to the sugar a small piece of butter, blend them in the blender together and moisten with some milk and flavor.
