TOMATO SAUCE

TOMATO SAUCE    - CLASSICS OF THE AMERICAN  FAMILIES IN 1882

The Classic Grand Americana recipe of 1882. The traditional and very popular Tomato Sauce for a fish recipe was recommended to all the families of the United States of America in 1882. The original recipe of  the Godey's Ladies Magazine.

TOMATO SAUCE   

For the Tomato Sauce  you will need

TOMATO SAUCE    

One quart of  ripe tomatoes -Roma tomatoes work the best

Two tablespoonfuls of  sweet unsalted fresh butter 

Two tablespoonfuls of all purpose  flour 

Eight whole cloves 

Small slice of onion 

Dice tomatoes into chunks and  cook them  with diced onion and cloves together, for about ten minutes; melt the butter in the deep cast iron skillet  and into it the flour,- stir it  till becomes brown, then add tomatoes, cook for a few minutes and finally season with salt, pepper; to make it finer, rub  the sauc through a sieve fine enough to back the seeds of the tomato, and  serve with fish.
