Baked Halibut Sandwich with Egg Sauce
2 slices of halibut fish- 1 lb each
1 hard boiled egg
6 slices of bacon
2 cups of bread crumbs dressing
2 tablespoons of butter
2 tablespoons of flour
1 1/2 cups of boiling water
1 pinch of Salt, or to taste
Grease the deep cast iron baking dish or casserole, and put the three slices of bacon into the bottom of a pan. On these stripes lay one slice of halibut, which has been lightly sprinkled with salt. Cover with a good bread crumbs dressing, well seasoned and fried in a little butter until slightly browned. Place the other slice of halibut fish on the top of the dressing, and put the remaining three slices of bacon on the top layer of halibut fish. Put just a little boiling water into your deep pan, just one third of the height of the fish and bake covered with aluminum foil in fairly hot oven about 45 minutes. basting several times- watch closely- it sticks. Remove carefully to platter and pour on the halibut the egg sauce over all.
EGG SAUCE
The egg sauce is made as follows
Put the butter and the flour into your cast iron saucepan, and stir until well blended, gradually add water, stirring constantly to smooth. Let it boil for several minutes. Season to taste, and at the end add the boiled egg chopped very fine. Decorate this sauce with finely chopped parsley, and the narrow sections of lemon .
