Parsnip Salad
3 boiled parsnips
2 large stalks of celery
1 tart apple rather red apple
1/2 teaspoon of onion juice
1 head of Lettuce
1 cup of boiled salad dressing
1 cup of Walnuts
Boil the parsnip roots in a salted water till rather tender, but still firm. Cut 3 boiled parsnips, and 2 large fresh stalks of celery diced into small palatable pieces, and 1 tart apple, rather fine. The apple you may grate with the beet grater. A little onion juice may be added, if liked.Mix the salad well with boiled salad dressing, and serve it nicely on the shredded lettuce leaves.. The grown ups may have their salad of boiled parsnip sprinkled thickly with meats of chopped walnuts.

OUR BOILED PARSNIP SALAD GARNI WITH FINELY CHOPPED PARSLEY LOOK NICE IN A CRYSTAL VASE.
