Savory Spinach

 Savory Spinach 

1 lb of  Spinach- fresh and 1 can of  canned spinach

1/2 cup of Butter

1  white Onion

1 cup of heavy Cream or 1 cup of half and half

1 cup of Milk

2 Eggs

2-3 stripes of bacon

Wash the spinach well in the fresh water, especially the sand from the roots.  Chop the spinach and put the spinach into a deep cast iron skillet, as well put into the skillet two tablespoons of butter and the chopped stripes of bacon. Let the butter melt a bit. Into a separate skillet  put 1 finely chopped white onion, and cook very gently until yellow and tender. Add one large can of spinach of the same amount. or freshly cooked spinach to your skillet with spinach. Season well with salt, and cook gently for about ten minutes, then add gradually one cup of cream, or top quality sweet milk. When well blended, add your onions to the spinach and  simmer for several minutes. When thoroughly heated through, serve the spinach garnished with slices of hard boiled eggs on the top,

OUR FAMILY PERSONALLY ADDED THE BACON INTO ONION IN THE SKILLET. AND OUR SPINACH WE USED TO MIX  THIS WAY- THE FRESHLY PARBOILED SPINACH WE MIXED IN THE DEEP SKILLET WITH A CAN OF SPINACH- A TWIST OF SOUTHERN CALIFORNIA CUISINE.

THIS IS THE TRADITIONAL WAY MY FAMILY PREPARES THE TRADITIONAL AMERICAN DISH - THE SAVORY SPINACH WITH HAM AND ONIONS, PREPARED  IN THE DEEP CAST IRON SKILLET. A NICE TREAT OF  THE SUPPER  OF OUR  FAMILY IN THE  STATE OF CALIFORNIA, GREAT BRITAIN, GERMANY AND LITHUANIA, AS WELL AS THE WHOLE UNITED STATES OF AMERICA.  THE  TRADITIONAL WAY WE COOK THE SPINACH IS WITH THE STRIPES OF HAM AND THE SAUCE  FOR THE SPINACH IS ALWAYS THE HEAVY CREAM OR SWEET MILK. AND  THIS IS ONE OF THE LESS FESTIVE DISHES OF THE FAMILY GATHERINGS AND REUNIONS, GOES WELL WITH THE BOILED POTATOES AT THE SIDE AND A GOOD STEAK.  THE  SPICES THEY MAY BE SERVED  WITH, ARE MOSTLY THE  BLACK PEPPER AND SALT.  FRESH SPINACH SAUTEED WITH ONIONS AND BACON, IS TRADITIONAL STAPLE OF THE WHOLE YEAR ROUND IN THE  STATE OF CALIFORNIA  AND IS   AVAILABLE IN THE UNITED STATES OF AMERICA FOR MORE THAN HUNDRED OF YEARS.

THE SAVORY SPINACH SAUTEED WITH MILK AND STRIPES OF BACON, WAS CONSIDERED AS THE SAFE AND SCROMPTUOUS  ALL YEAR ROUND DISH, SUITABLE AND  ALLOWED FOR  THE LITTLE CHILDREN AND TODDLERS, IF THE HEAVY SPICE, LIKE THE BLACK PEPPER, CHIVES WAS AVOIDED.
