Savory Spinach
1 lb of Spinach- fresh and 1 can of canned spinach
1/2 cup of Butter
1 white Onion
1 cup of heavy Cream or 1 cup of half and half
1 cup of Milk
2 Eggs
2-3 stripes of bacon
Wash the spinach well in the fresh water, especially the sand from the roots. Chop the spinach and put the spinach into a deep cast iron skillet, as well put into the skillet two tablespoons of butter and the chopped stripes of bacon. Let the butter melt a bit. Into a separate skillet put 1 finely chopped white onion, and cook very gently until yellow and tender. Add one large can of spinach of the same amount. or freshly cooked spinach to your skillet with spinach. Season well with salt, and cook gently for about ten minutes, then add gradually one cup of cream, or top quality sweet milk. When well blended, add your onions to the spinach and simmer for several minutes. When thoroughly heated through, serve the spinach garnished with slices of hard boiled eggs on the top,
