Spinach with Noodles
2 cups cooked and chopped spinach
2 cups cooked egg noodles
1 cup milk
1/2 cup grated cheese
2 tablespoons butter
2 tablespoons flour
Salt
Choose the short noodles- cheveux d'ange or the elbows work best. Cook the noodles in the salty water, drain well with cold water. Cook the spinach in boiling salty water. Mix into the noodles the butter- generously and then place the cooked noodles in buttered baking dish, and cover the top with grated cheese- we usually choose Mozarella or Monterey Jack. Over the grated cheese arrange the layer and put the boiled spinach.
Make a white sauce of milk, butter, flour, and salt,- and pour this sauce over the spinach to cover the spinach fully with sauce, and sprinkle the top of the casserole with remaining cheese. Bake the casserole in the hot very oven for ten minutes, in a middle hot owen- for 30-45 minutes- depends on how well you want your cheese be melted.

THIS CASSEROLE WAS POPULAR AMONG OUR RELATIVES IN IOWA.
