Fruit Meringue Cream
3 /4 cup sugar
1/ 3 cup flour
1 teaspoon salt
3 egg yolks
3 egg whites
1 teaspoon vanilla or
1/2 teaspoon lemon
3 cups scalded milk
11/2 cup powdered sugar
1/4 cup toasted cocoanut
3 cups sliced oranges and bananas
Mix the dry ingredients togetherm add the egg yolks slightly beaten, and pour gradually the scalded milk. Cook for fifteen minutes in a double boiler, stirring constantly until thickened, afterwards occasionally. Flavor and over the friut in the serving bowl. Beat the egg whites and fold in the powdered sugar. Cover with cocoanut and bake ten minutes in a slow oven 320 F.
