Jellied Chicken Meat or Fish
2 tablespoons gelatin
2 cups meat stock
1 cup cold water
1 teaspoon salt
2 tablespoons lemon juice
1/4 cup diced cooked celery
2 cups cooked meat
Soak gelatin in cold water for 5 minutes and then dissolve in the boiling meat stock or water, add celery, salt, and lemon juice .When mixture begins to stiffen, add meat, pour into the mold and chill.
