Lemon Meringue Pie
(An old Maine Recipe)
1 pie shell
3 tablespoons cornstarch
1 teaspoon of butter
2 eggs
1 lemon with a rind
2 tablespoons of granulated sugar
Bake the pie shell first. Then make filling as follows. Moisten 3 level tablespoons cornstarch with just a little cold water, then add I cup of boiling water, stir until it boils and let it boil for three or four minutes. Add 1 teaspoon of butter and 1 cup of sugar. When dissolved, remove from the stove when cool, add yolks of 2 eggs, and a grated rind and juice of 1 lemon. If you wish a larger pie, take 3 eggs. Pour into baked crust. Cover with a meringue made by beating of 2 egg whites stiff and folding in 2 tablespoons of granulated sugar. Brown lightly in oven.
