Orange Custard
3 tablespoons of cornstarch
1/2 cup sugar
11/2 cups evaporated milk
1/4 teaspoon salt
11/2 cups orange juice strained
Grated rind of one orange
Mix thoroughly cornstarch, sugar, and salt. Add one-half cup of milk and blend until smooth. Heat remaining milk in the double boiler. Add cornstarch mixture and cook until it begins to thicken. Add orange juice and grated rind, and cook until thick, stirring constantly to avoid lumping. Turn into molds and chill.
