Stuffed Sweet Potatoes
8 sweet potatoes
1 cup chipped crisp bacon
1/2 cup sugar
Stuffed Sweet Potatoes Peel large sweet potatoes and cut in half lengthwise Scoop out 1/2 of the potato meat, and fill the cavities with chipped crisp bacon. Lay the halves of potatoes together, fasten with a toothpick, put in a bake pan with a little sweetened water, using a tablespoonful of sugar to each cup of water. Bake until tender, basting occasionally. A little minced ham, chicken, or most any kind of meat that has already been cooked, may be used as well.
