CARAMEL ICE CREAM
1/2 of a cup of white granulated sugar
1/2 of a cup of a boiling water
For this classic American topping- caramel ice- cream topping, you need to put one half a cup of the white granulated sugar into your cast iron saucepan over a slow fire and stir the sugar until it is melted and got the dark brown color. Add a half of a cup of the boiling water and simmer the sugar with the water for good 10 minutes. Add enough of this caramel syrup to any ice cream you prefer, to give the ice- cream the desired American traditional flavor and color. We found that the best way to serve caramel topping is on the vanilla or simple rich cream without any additional flavor ice-creams. although these ice- creams should be made with less than the regulation amount of sugar. The traditional caramel ice-cream topping works well with the diet ice-cream. Freeze your ice- cream in the customary manner if you mixed the caramel with the ice- cream itself. Whipped cream may be served on the top of this the ice- cream so made or it may be stirred in, when the caramel cream is partly frozen.
