GRAPE JUICE SHERBET

1 quart of grape juice
1 pound of white granulated sugar
6 oranges
1 egg
1 teaspoon of sugar for the egg
For this traditional American classic sherbet, you will need to sweeten one quart of the Concordia grape juice to taste, and add one half of a pound of white granulated sugar to the juice of six medium oranges. Stir or blend the sugar until the sugar dissolves in the juice. Then mix the orange juice with the sweetened grape juice and freeze slowly. Before putting into freezer- beat the white of one egg adding to it a pinch of salt and a teaspoonful of granulated sugar. Fold the stiff white of the egg into the sherbet mass, repack and set aside for two hours. Serve the ice-cream in sherbet cups.
