For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
5 or 6 pounds of maple sugar
1 pint of cold filtered water
2 pints of sweet heavy cream

For this type of dessert topping and dessert sauce, you take five or six pounds of good quality maple sugar and pour it into your cast iron kettle. Add to this sugar one pint of filtered water and bring this sugar to the boiling point until it fully melts. When your sugar is boiling and melted fully, slowly stir into it the two pints of heavy cream, stir vigorously until it custards nicely.
