MAPLE CHOP SUEY DRESSING -CLASSICS OF THE AMERICAN PHARMACIES

For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
4 ounces of chopped pitted dates (Dromadero)
1/2 pound of chopped seedless raisins (Sultana works the best)
1 quart of Maple syrup
4 ounces of green maraschino cherries
4 ounces of red maraschino cherries
4 ounces of fresh crushed pineapple fruit

For this type of dessert topping and dessert sauce, you put into your cast iron kettle and cook together 4 ounces of nicely chopped Dromadero dates with 1/2 pound of chopped seedless Sultana raisins in I quart of maple syrup. When your topping is starting to thicken, turn of the fire and let it cool down. Ino the cold syrup you add four ounces of green and 4 ounces of red maraschino cherries and 4 ounces of fresh crushed pineapple fruit, bring your dressing to the boil and and reduce to a working consistency with a maple syrup.
