MAPLE FRUIT DRESSING NO.2 -CLASSICS OF THE AMERICAN PHARMACIES
The Classic Grand Americana recipe. The popular American ice-cream and family dessert topping was made in all the pharmacies of the United States of America in 1918 all year. The original recipe of the New England, Boston, and New York pharmacies.
For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
1/2 pound of figs
1/4 pound of pitted dates (Dromadero)
2 ounces of candied citron
3 pints of Maple syrup

For this type of dessert topping and dessert sauce, you put 1 /2 pound of figs, 1/4 pound of seedless raisins, 1/4 pound of pitted dates and 2 ounces of candied citron into the cold filtered water and soak them for a night. Drain them in the morning and run through fruit chopper. Put them into the cast iron kettle and add tp this 3 pints of the good quality maple syrup with a little of cold filtered water to make enough of it up for evaporations and boil that syrup for good 15 to 20 minutes. When your dressing gets cold, add some more maple syrup if needed. Traditionally this dressing is paired with the top of the whipped cream when serving.
