MAPLE FUDGE, HOT DRESSING  -CLASSICS OF THE AMERICAN PHARMACIES

 The Classic Grand Americana recipe. The popular American ice-cream and family dessert topping was  made in all the pharmacies of the United States of America in 1918 all year. The original recipe of the New England, Boston, and New York pharmacies. 

For this original   American classic ice-cream- sundae dessert topping of the beginning of the last century  you will need:

 1 pound of Maple sugar

1 pound of brown sugar

1 pint of cold filtered water

1 heaping teaspoon of sweet unsalted fresh butter

3 pints of Maple syrup

MAPLE FUDGE, HOT DRESSING 

For this type of dessert topping and dessert sauce,  you put one pound of the good quality maple sugar and one pound of brown sugar and one pint of cold filtered water into the enamel or lined with porcelain kettle and add to this 1 heap teaspoonful of sweet unsalted fresh butter. Put your kettle over the slow fire in a double boiler and beat with the whisker until your sugar gets dissolved fully. Then boil some more for three minutes, stirring vigorously and constantly to prevent your dressing from scorching. When done, put  your sauce into the fudge warmer to keep hot.
