MAPLE FRUIT DRESSING -CLASSICS OF THE AMERICAN PHARMACIES
The Classic Grand Americana recipe. The popular American ice-cream and family dessert topping was made in all the pharmacies of the United States of America in 1918 all year. The original recipe of the New England, Boston, and New York pharmacies.
For this original American classic ice-cream- sundae dessert topping of the beginning of the last century you will need:
1 pound of mixed dried fruits
1 quart of Maple syrup
1/4 pound of chopped English walnut meats
1 pint of whipped cream
MAPLE FRUIT DRESSING
For this type of dessert topping and dessert sauce, you put 1 pound of mixed dried fruits( prunes, dried apples, apricots, figs,dates, and raisins) into the cold filtered water and soak them for a night. Drain them in the morning and run through fruit chopper. Put them into the cast iron kettle and add tp this 1quart of the good quality maple syrup with a little of cold filtered water to make enough of it up for evaporations and boil that syrup for good 15 to 20 minutes. When the fruit will be tender and properly cooked boil, lower the fire and cook some more, for about 15 or 20 minutes. After that add to the fruits 1/4 of a pound of the chopped English walnut meats cut fine and soaked for several hours. When your dressing gets cold, add some more maple syrup if needed. Traditionally this dressing is paired with the top of the whipped cream when serving.
