MAPLE ORIENTAL FRUIT AND NUT DRESSING
For this type of dessert topping and dessert sauce, you take a quart of a good maple syrup and heat it in a copper kettle with 2 ounces of prunes, 2 ounces of citrons, and 2 ounces of pitted dates. The dried fruit should be soaked beforehand for 12 hours, drained well and run through the food chopper. Bring the fruits and syrup to the boiling point. Then turn the fire off and let them cool down. When your syrup cools down, add to the mix 2 ounces of chopped blanched almonds and 2 ounces of the hickory nut meats. You finish with this topping by adding to the dressing enough of maple syrup to get 1/2 of the gallon of the finished product.
