MAPLE RAISIN NUT DRESSING

For this type of dessert topping and dessert sauce,  you take a pint of a good  maple syrup and heat it in a copper kettle with one pound of finely chopped English walnuts and 1 pound of finely chopped seeded raisins. The raisins should be soaked before in a cold water for 12 hours, drained and run through the food chopper. Bring the nuts  and the raisins and your syrup to the boiling point. To elevate the taste of the raisins to the more prominent, you may add the raisins to the syrup at the boiling point and cook only for a few minutes.  Then turn the fire off and let them cool down. This brings out the flavor of the seeded raisins and improves the the looks and texture of the dressing.
