PECAN CREAM SLICES
The Classic Grand Americana recipe. The popular sugar candy sold in all the pharmacies of the United States of America in 1908. The original recipe.
For this original American candy of the beginning of the last century you will need:
11 /2 pound of glucose powder- fructose works fine as well
2 pounds of maple sugar
2 pounds of white granulated sugar (Confectionery grade A)
6 pounds of fondant cream
2 pounds of pecan nut meats
1 quart of fresh cold water
You begin by making your candy with putting the sugar and the cold water into the cast iron kettle over the stove and cooking i up to 234 degrees Fahrenheit. When your sugar melts down,turn off the fire, take it off the fire, and mix into this mass the glucose powder and the cream. When the cream is dissolved fully, put pecans into it and enough of burnt sugar coloring, to give the batch of the candies a nice maple syryp color. Pour out the candy mass into the well greased pan, up to the thickness of two inches, and when it gets cold, cut into slices of the desired size.
