SUGAR WINTERGREENS
The Classic Grand Americana recipe. The popular sugar candy sold in all the pharmacies of the United States of America in 1908. The original recipe.
For this original American candy of the beginning of the last century you will need:
5 pounds of white granulated sugar
1 pound of fondant cream
1 quart of fresh cold water
11/2 teaspoonful of culinary grade wintergreen oil
You begin making your Christmas Candy by putting the sugar and the water into the cast iron kettle over the fire and cook it up to the 238 degrees of Farhrenheit. When your sugar melts to the caramel point, turn the fire off. Take your candy off the fire and mix into it the cream fondant. Stir the candy mass vitgorously, until the cream dissolves, and the batch thickens up. Then drop out this candy mass with the cream funnel onto the wax paper the size of a penny. Display nicely on the shiny platter.
