Russian Pancakes -CLASSICS OF THE AMERICAN METHODIST FAMILIES
The Classic Grand Americana recipe. The popular Russian Pancakes recipe was recommended to all the Methodist families of the United States of America in 1908 all year.
Russian Pancakes were served in the houses of New York and North Carolina
For this classic American Russian Pancakes recipe you will need
3 tumblers of water
1/2 of compressed yeast cake
2 pounds of all purpose white wheat flour
1/2 of buckwheat
2 eggs
1 teaspoon of kosher salt
3 tumblers of milk
In the evening:
Make a sponge of three tumblerfuls of lukewarm water and a half of a compressed yeast cake, which and a pound of wheat flour. Beat the dough well, cover with a cheesecloth and let it stand in a warm place for a night.
In the morning add to the sponge another pound of the wheat flour, and half of a pound of the buckwheat. Slowly fold in two beaten eggs and a teaspoonful of kosher salt.
Set the dough to the warm place to rise again and when it is light, pour over it the three tumblers of milk -scalded and cooled down to lukewarm. Let the dough rise still again.
Bake the cakes in well buttered muffin pans. Serve them hotm garni with sour cream and a dollop of melted butter or caviare. As the traditional Russian flour is much coarser than standard American, if you take the Russian four- the three quarters of a pound may suffice instead of the pound.
