FROZEN PUDDING - CLASSICS OF THE AMERICAN FAMILIES IN 1882

FROZEN PUDDING
For the Frozen Pudding bread you will need
Two dozen of sponge cakes
One cup of dried currants- black ones work the best
One pint of whipping cream
One pint of fresh sweet milk
Tea-cup of white granulated sugar
Three eggs
Beat the cold eggs with sugar and pour on them the boiling milk; put the milk into the milk boiler and cook for two minutes, stirring all the time; pour it on the cake which should be made from small strips or cakes, add the currants; when it cools down and is perfectly cold, add the whipping cream, whipped to a froth; freeze as an ice-cream when it begins to stiffen thus,- wet your mould and sprinkle a few currants on the sides and bottom, then pack in the frozen mixture, pack the mould in salt and ice for one hour, and serve with apricot sauce on the top.
