RUSSIAN BREAD  - CLASSICS OF THE AMERICAN  FAMILIES IN 1913

The Classic Grand Americana recipe of 1914. The popular Russian bread recipe was recommended to all the families of the United States of America in 1914. The original recipe of WASHBURN CROSBY CO'S , very popular Gold Medal Flower of THE UNITED STATES OF AMERICA.

RUSSIAN BREAD

For the Russian bread  you will need

 4 1/ 2 cups of Gold Medal Flour 

1 cake of compressed yeast 

11/ 4 cups of  scalded sweet fresh milk 

1 /4 cup of white granulated sugar 

1 1./2 cups of  raisins

 2 eggs 

1/4 cup of sweet unsalted butter 

1 teaspoon  of salt - Kosher salt works the best

Cinnamon to taste 

Dissolve the yeast in scalded milk, which should be cooled to 80 degrees. and  add 11/2 cups flour, and mix until smooth, then let stand until it rises light and puffy. Add the eggs, sugar. melted butter, raisins and salt, and the  remainder of the Flour and cinnamon. Mix it to a stiff dough,  and knead thoroughly, but not rudly. Cover with the cheesecloth or linen towel. Let  it stand in a warm place until double in volume. Divide the dough into two equal parts for two loaves; cut each loaf into three equal parts, roll the parts into strips about 12 inches long and lapering to a point at each end; press ends together  and braid, then brush with warm milk or eggs.  Sprinkle with  cinnamon to taste.  Place on buttered baking sheet cover and allow to stand until light. Bake from one half to three quarters of an hour. When cool, ice with an icing made by mixing a few drops of hot water with powdered sugar, flavoring with vanilla.
