How to recognize the old egg?

This is how the confectioners of the United States Of America suggested to look for an old egg in the batch. Each homemaker and a lady knew that, Some eggs after a certain age.-(two weeks if there is no fridge) get watery, and the yolk of the egg always goes to the top of the shell, where it remains until the egg fully decays and rots. The yolk of the fresh egg is always staying in the center of the egg. You will not find an egg, where the yolk descended to the bottom of the shell in the shop. This is the old egg which is never sold and there is scarcely ever  an egg found in a case of the eggs on the shelf in American supermarket. 

How do they find those old eggs? 

Just a simple screening process- the egg was screened through the strong lamp- the shade was watched and standardized tables were used for evaluation of the freshness of the eggs since  early 1900ds in the USA and Germany.

So, if you have a batch of unknown age eggs- you can look through the big light of the table lamp and notice the shade of the yolk. Just need the special stand for that process.

How to recognize a cracked egg?

Why the yolk, which is giving the life of the egg and the future bird. and the heaviest substance of the egg,  rises instead of falling, is a matter of conjecture. Men who have made a study of eggs for decades and centuries, still can not agree as to the cause. Perharps the old saying- "which came earlier- the hen or the egg?"- came from that type of the scientific research.  Some scientists are  asserting that the white of the egg is the body of the egg, and  is naturally heavier than the yolk of an egg.That means, that the white of the egg  is consequently forcing the yolk out from the egg  to the top like the water is forcing a cork to the top of the bottle.  Other scientists assert that the yolk is heavier than the egg white and, and thus , the yolk of the egg. like oil in the water can not be kept down, and is pushed to the top of the water and makes a film on the top of the water.  However the yolk of a cracked egg, drops to the bottom of the shell. Simple fact- if the shell of the egg is cracked- the yolk of the egg will be on the bottom of the egg- this will be found while scanning the egg through the strong source of light.
