For this classic Native American Beet Salad you will need
6 young beets
1 head of white lettuce (Iceberg will do fine)
1 jar of mayonnaise
Cook half a dozen of the very young beets until they are very tender. Slice the beets as thin as possible. Line a serving dish with crisp white lettuce leaves and place the beets in a pile in the center. Mayonnaise dressing may be poured over the boiled beetts, or served in a pitcher with the salad.
