Boiled Greens Salad
lettuce
chicory
beet tops
turnips tops
Swiss chard
spinach
6 hard boiled eggs
6 tomatoes
The outside leaves of lettuce ,chicory, beet tops, turnips tops, Swiss chard, or spinach may be used. Any or all of these may be boiled in salted water uncovered until tender. Drair and when cool, pack into a mold,- large or individual. When ready to serve, turn out on crisp lettuce leaves, and garnish with slices of hard boiled egg, or slices of tomato Serve with a simple boiled dressing See Menu XIII
