Swedish Health Soup
1 lb fresh shelled green peas
2 or 3 medium sized carrots diced
1/2 qts fresh milk
1 egg beaten
Chopped parsley
Salt to taste
Cook the peas and carrots in just enough water to cover .Bring milk to a boil, and add to the peas and carrots, and the juice in which they have been cooking. Take off the stove and while stirring, add the beaten egg, and season to taste. Serve with a sprinkling of very finely chopped parsley in each soup plate. Mrs COW Brooklyn NY See Menu IV
