Crushed Pincapple Tapioca
11/2 cup crushed pineapple
1/4 teaspoon salt
1 cup pineapple juice
1 teaspoon grated orange rind
3 tablespoons tapioca
Bring the juice to the boiling and add the salt and tapioca, and cook the double boiler until tapioca turns clear. Add pineapple and orange rind, chill and serve cold with plain or whipped cream
