Thanksgiving Birds
2 round steaks
2 onions
1 cup of drippings
1 cup of bread crumbs dressing
Have round steak cut 1/2 inch thick and in slices about the size of one's hand. Sprinkle with salt and cover each piece with a layer of good bread crumb dressing, roll like jelly roll and tie with string. Brown each bird in good drippings, then add 1 or 2 onions sliced fine, turn fire low and cook until onions are yellow and tender; add very little hot water and simmer until the meat is tender. Lift to platter and remove strings. Decorate with parsley and serve at once. See Menu IV Turn to page 40.
