Crisp Waffles
For the Crisp Waffles you will need
1 Heaping Pint of Flour
1 Teaspoonful of Baking Powder( Calumet or Glabber Girl works the best)
1/4 Teaspoonful of Salt (Kosher salt works the best)
1 Tablespoonful of Fresh Sweet Melted Butter
3 Eggs
1 Pint of Sweet Fresh Milk
Maple Syrup
Sift the flour into a metal bowl ir plastic basin and add the baking powder, and the salt; and then sift the flour once again. Beat the yolks of the cold eggs until very light, then add to the lukewarm milk the melted butter and one third of the flour. Beat the whites of the eggs to a stiff froth, and add them alternately with the remainder of the flour. Cook on a moderately hot greased waffle iron. Serve hot with maple syrup.
