Lemon Sherbet
Juice of 2 lemons
Juice of 2 oranges
1 pint sugar
1 quart of milk
Mix lemon and orange juice with sugar thoroughly. Put in the ice-cream can which has been chilled in the refrigerator, then put into the freezer. Pack with ice and salt, allowing three level measures of ice to one of salt to insure a smooth and fine-grained sherbet. Just be fore turning, pour in the milk and turn quickly to prevent curdling. Turn slowly but steadily until mixture is frozen. This is my pet sherbet recipe and should be smooth and very fine grained.
